Our 5 AA Red Star award-winning hotel has established itself as one of the leading luxury hotels and restaurants in Wales and the UK, set in the stunning Pembrokeshire countryside overlooking the Preseli Hills.
The Fernery restaurant holds 4 AA Rosettes and is under the leadership of the hugely talented Executive Chef Douglas Balish. The team also oversees the Artisan Rooms Brasserie, offering a more relaxed dining option to guests while still showing care and attention as to where ingredients are sourced.
Our Head Sommelier, Cathryn, is now looking for a passionate and dedicated Assistant Head Sommelier or Sommelier to join the team.
What we offer:
- Package up to £39,000 including gratuities, dependent on experience.
- Gratuities are shared through a Tronc system and currently amount to 2k per annum.

The candidate will have the following attributes:
- Outstanding experience as a Sommelier or above in a comparable fine dining environment.
- Clear passion to deliver an exceptional customer experience.
- Excellent knowledge of world wines, spirits, and cocktails.
- Well organized with good attention to detail.
- Genuine and sincere nature.
- Smart presentation and a friendly yet professional personality.
- Resilient nature and ability to work under pressure.
- A strong team working ethic.
