Our management team

At the heart of Lan y Môr are two passionate professionals whose combined talents create an unforgettable dining experience.

Head Chef – Gerwyn Jones
Gerwyn brings a wealth of experience and a love for local, seasonal ingredients to Lan y Môr. Having honed his craft in prestigious kitchens, including the Michelin-starred Ynyshir, he joined Grove of Narberth in 2018 as Sous Chef and rose to Head Chef in 2021, leading the award-winning Fernery restaurant. Now, at Lan y Môr, Gerwyn’s dedication to provenance and creativity perfectly complements the restaurant’s ethos. When not in the kitchen, you’ll find him kayaking along Pembrokeshire’s stunning coastline.

Restaurant Manager – Nikos Chatzitheodorakis
Originally from Greece, Nikos brings a warm and dynamic approach to hospitality. With an impressive background, including roles at The Woodspeen and The Vineyard Hotel, he is passionate about creating memorable guest experiences. Inspired by his family’s tradition of hosting lively neighbourhood feasts, Nikos adds energy and joy to the Lan y Môr dining room. Outside work, he enjoys exploring the Pembrokeshire countryside and perfecting his baking skills at home.

Together, Gerwyn and Nikos ensure that every element of Lan y Môr reflects its vibrant, welcoming spirit and celebrates the best of Pembrokeshire.
